Labor Day marks the end of the summer. A chance to gather once more with friends and family before the autumn weather arrives. It is marked with parades and parties.

The first Monday of each September, we recognize the American labor movement. The day is an annual recognition of laborers and their many achievements. It is also a time of celebration as summer comes to an end. Kids return to schools, the fall leaves start appearing and families prepare for the holidays to come.

On top of all that wouldn’t it be nice to bring a healthy recipe too? Let’s see what we can come up with.

Charm City Corn

Nothing screams summer more than corn on the cob. You can’t walk into a grocery store and not come across a large bin full of the green stalks.

You want to choose just the right pieces for your guests. Look for the brown stringy tassels at the top. If they are wet and sticky you have a freshly picked stalk. The stalk should be a bright green and wrapped tightly around the cob. When you find those two things, you have found the good stuff!

After you get it home and all shucked you’re ready to start this delicious twist on a summer staple. Charm City Corn only takes a short 20 minutes. Top that off with just 3 or 4 ingredients and you have a last minute recipe. Throw this together just before heading out the door.

Poppy Seed Potato Salad

Okay, so I know I said we are going beyond potato salad but this recipe does just that! There is nothing standard about Poppy Seed Potato Salad. It is sure to be a hit at the Labor Day cookout. Healthier and full of flavor, it brings potatoes to the party without all the mayonnaise.

With only 6 ingredients and a short ten minutes of active prep time this is perfect for that last minute invite. Keep in mind it does have a 20 minute standing time to drain.

Toss together, get yourself ready while it drains and then throw it together real quick. You are out the door with this delicious dish in hand in about half an hour.

Mom’s Salad

Mom’s Salad is not your typical green salad. This flavor packed salad is a great side or you can toss some chicken on top for a full meal. One reviewer even tossed in some black olives on top.

The prep time is a short five minutes. Not all of us have the fastest dicing skills so give yourself a bit more time. Once you have made it a time or two you all know just how quick you can create the salad.

If you want to take this to a cookout you want to store the dressing in a travel container. Once it is time to enjoy the foods pour it over top, give a quick toss, and it is ready to serve. This will keep your greens from wilting. You don’t want soggy leaves on Labor Day!

Mini Hawaiian Chicken Skewers for Labor Day

Mini Hawaiian Chicken Skewers are a little more time consuming than the other recipes in this article but well worth it.

The number one perk of skewers at an outside gathering is no dish needed. A finger food that you can make your own by switching out one meat for another or adding new ones.

The recipe calls for chicken. Swap that out for steak and shrimp for a surf and turf flavor. The sauce could easily be used as a marinade for overnight. Use larger pieces of meat and marinade for a main dish.
